  1. Preheat oven to 375°F (190°C).
  2. Cut beets into thin slices - about 1/8-inch thick or so.
  3. Place beet slices on a baking sheet lined with parchment paper and spread them out evenly.
  4. Drizzle olive oil over the beet slices and sprinkle with salt and pepper.
  5. Bake for 15 minutes, flip beet slices over, then bake for another 10-15 minutes or until beet chips are crisp.
