Ingredients

For The Cake

  • 1 large egg (at room temperature)
  • 1/4 cup (or 50g) of sugar
  • 1 teaspoon (or 5ml) of vanilla extract
  • 1/4 cup (or 60ml) of cooking oil
  • 1/4 cup (or 60ml) of milk
  • 1/2 cup (or 68g) of all-purpose flour
  • 2 tablespoons (or 15g) of cocoa powder
  • 1/2 teaspoon (or 2.5g) of baking powder

For The Dark Chocolate Mousse

  • 2.12 ounces (or 150ml) of heavy whipping cream
  • 5.07 ounces (or 80g) of semi-sweet dark chocolate
  • 1/4 cup (or 60ml) of milk
  • 1 sheet (or 2g) of gelatin or agar

For The White Chocolate Mousse

  • 2.12 ounces (or 150ml) of heavy whipping cream
  • 5.07 ounces (or 80g) of white chocolate
  • 1/4 cup (or 60ml) of milk
  • 1 sheet (or 2g) of gelatin or agar

Note: for the medium beige chocolate layer, take half the ingredients of the Dark Chocolate Mousse and the White Chocolate Mousse.

For The Top Chocolate & Fruits Layer

  • 2.12 ounces (or 60g) of semi-sweet dark chocolate
  • 1/5 cup (or 45ml) of milk
  • 8.8 ounces (or 250 grams) of fresh mixed berries for garnish (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease an 8-inch round baking pan with butter or cooking spray and set aside.
  2. In a stand mixer, whisk together egg, sugar, vanilla extract, oil, and milk until well combined.
  3. Add flour, cocoa powder, and baking powder and whisk together until no lumps remain.
  4. Pour the cake batter into the prepared baking pan.
  5. Bake in preheated oven for 25 minutes or until a toothpick inserted in the center comes out clean.
  6. Once baked, remove from oven and allow to cool completely before assembling the multi-layer chocolate cake.
  7. To prepare the dark chocolate mousse, add heavy cream, semi-sweet dark chocolate, milk, and gelatin or agar in a medium saucepan over medium heat.
  8. Stir continuously until the mixture is smooth and combined. Allow cooling before use.
  9. To prepare the white chocolate mousse, repeat the same process as above but use white chocolate instead of dark chocolate.
  10. To prepare the beige chocolate mousse, repeat the same process as above but use the mixture of dark and white chocolate.
  11. To assemble the multi-layer chocolate cake, place the 8-inch round baking pan on a flat surface.
  12. Place the 6-inch cake ring in the center of the baking pan and line it with parchment paper.
  13. Pour half of the dark chocolate mousse into the cake ring, followed by half of the beige layer, then top it with half of the white chocolate mousse.
  14. Place the multi-layer chocolate cake in the refrigerator and let it set for about 45 minutes.
  15. Once set, remove from the refrigerator and pour the remaining half of the dark chocolate mousse followed by the remaining beige and white chocolate mousse.
  16. Refrigerate the multi-layer chocolate cake for 3 hours or until completely set.
  17. To make the top chocolate & fruits layer, heat milk, and semi-sweet dark chocolate in a medium saucepan over medium heat while stirring continuously until the mixture is smooth.
  18. Pour the mixture over the multi-layer chocolate cake and refrigerate for 1 hour. Alternatively, you can cover the sides of the cake with this mixture, and leave the center white, as in the pictures below.
  19. Remove the multi-layer chocolate cake from the refrigerator and garnish it with fresh mixed berries (optional). Enjoy!
